There’s a somewhat secret restaurant in West Valley that’s worth seeking out. At Tonkotsu Shabu Shabu bar, you’ll enjoy the art and science of shabu shabu, a Japanese hot pot dish, where fresh meats and vegetables are cooked in a flavorful boiling broth right in front of you at your own cooking station.

The menu is straight forward—choose your protein (beef, lamb, pork belly, scallops, salmon or chicken) and then a broth (tonkotsu, miso, kombu, sukiyaki or kabocha).

Customize your shabu shabu with provided sauces and condiments—including personalized drops of chili oil in the ponzu and a carrier of chopped garlic and fresh accompaniments to add to each broth.
