Chef Dave Bible explains geoduck in Devour Utah

Seafood in itself is typically really ugly. Spiky shells, claws, tentacles, etc. it all makes for a rather puzzling discussion of who first decided they would dare eat this stuff?! Don’t get me wrong–I could live on seafood alone–be it crab, octopus, mussels or fish, I love it.

Which brings me to the geoduck–a giant saltwater clam that looks rather phallic in nature. But this delicate, slightly sweet mollusk is raging in popularity–so much so that it’s hard to find outside of the Pacific Northwest.

Yet chef Dave Bible, executive chef at Maxwell’s and Myrtle Rose in Park City explains why this clam really is his jam.
