Tupelo Park City is partnering with Staglin Family Vineyard to present a four-course wine dinner event on Thursday, February 22 at 6:30 p.m.
Founded in 1985, Staglin’s mission is to produce world-class wines that reflect the distinctive character of its historic Rutherford Bench estate. In Utah, most of the wines are only available via special order. The dinner will feature a carefully crafted menu designed to highlight the wines’ most exceptional qualities.
The evening’s first course features a duo of sashimi of halibut, lavender shoyu, compressed pineapple, kombu mint sust with Spanish EVOO paired with a 2014 Salus Chardonnay and ricotta and honey, orange spice gastrique and puffed carrot chips paired with a 2014 Estate Chardonnay. Second course is a venison carpaccio, pickled beets, crisp beet chips with black garlic yuzu aioli paired with a 2015 Stagliano Rosato. Third course is a pan-roasted barramundi, pistachio, roasted shallot soubise, morello cherry and roasted root vegetables with a 2014 Stagliano Sangiovese. Fourth course features a pecan-smoked desert mountain beef, parsnip puree, Brussels sprouts and charred rosemary glaze with a 2011 Estate Cabernet Sauvignon. Chocolate truffles and macarons will finish off the evening’s menu.
